Bubbleberry ice cream copy 2

Bubbleberries are a sweet, bubblegum-flavoured strawberry from United Nurseries that kids love. Try using homegrown berries to make this creamy strawberry ice cream. It will be a hit with kids and adults.

½ cup of honey, raw honey or maple syrup
2 teaspoons vanilla extract
1½ cups thickened cream
¾ cups of full cream milk
2½ cups fresh or frozen Bubbleberries
1 tablespoon lemon juice

1 Whisk honey, vanilla, cream and milk together. Set aside.
2 Use a food processor or blender to puree Bubbleberries. If using frozen berries, defrost slightly before processing.
3 Mix lemon juice with pureed Bubbleberries.
4 Combine all ingredients together into a bowl and whisk thoroughly.
5 Process together in a pre chilled ice-cream maker.
Hint: The more Bubbleberries you add, the stronger the bubblegum flavour.
